Macro Monday..and a few recipes!


I spent pretty much all day yesterday baking goodies to give to various people this week.  This photo is the beginning of my Chocolate Chip Biscotti.  Yuuum.

Seriously, these are so yummy and sooo easy to make.

Here's the recipe just in case you want to try them (and you should..people will be soo impressed you made biscotti 'cause it sounds a lot harder than it is!):

Ingredients
1 pouch (1 lb 1.5 oz)  sugar cookie mix
1/3 cup butter or margarine, softened
1 egg
1/4 cup flour
1/2 cup walnuts (or pecans, or hazelnuts..)
1/2 cup cherry-flavored dried cranberries
1 1/2 cups semisweet chocolate chips

Directions
Make cookie dough blending cookie mix, butter, egg, flour, walnuts, cranberries, and chocolate chips until stiff dough forms.  Roll dough onto ungreased cookie sheet and bake at 350 degrees for 20-25 minutes.  Cool 15 minutes.

 Cut "cookie" into 3/4 " slices.  Place slices, cut side down, on cookie sheet.  Bake 10 to 12 minutes, turning once, until crisp.  Cool completely on cooling rack.

I also made these fabulous peanut butter cups that are even easier to make than the biscotti..

Ingredients
1 (12 oz) bag of white chocolate chips
1 (18 oz) jar of peanut butter (I personally prefer chunky..but it works with whichever!)

Directions
Melt chocolate chips in microwave, stir in entire jar of pb. 
Spoon mixture into cupcake liners and let cool until they harden.

Makes about 20 peanut butter cups.

That's IT!

They are soooo good..no one will believe there are only 2 ingredients!
