Spicy Kale Chips
Who would have thought that Kale could be so gooood?
Oooo-I love when I get bokeh in the most unexpected places!
Fancy Smancy Olive Oil
I actually used my cheap-o olive oil for this recipe but this bottle was so pretty that I wanted to take a photo of it!
So here's the easy peasy recipe:
Remove the center ribs and stems from 1 bunch kale; tear the leaves into 3-to-4 inch pieces.
Toss w/1 tablespoon olive oil, 1 teaspoon smoked paprika and 1/4 teaspoon salt.***
Spread on baking sheets coated with cooking spray.
Bake @ 350 degrees until browned around the edges and crisp, about 12-15 minutes.
***I didn't have smoked paprika (though that does sound good!), so I used a little bit of chile powder, garlic powder ('cause I looove garlic), onion powder and a salt blend that has rosemary, garlic, oregano, black peppercorns and red bell peppers in it. This is actually my go-to spice blend that I use for pretty much anything that I throw in the oven! Oh, and I never measure olive oil and spices..I just eyeball it.
They were delish and they honestly satisfied my junk food craving because they were a little salty and crisp similar to potato chips. And they were soooooo easy to make. I think I may make them again today!

Sounds good and good for you as well. Nice shot of the kale as well.
We used to make kale chips, but just with salt...but last time I ate them they made me sooooo sick. And you know, after something like that happens, you just can't ever even think of eating it again :(
